Spinach Feta Egg Scramble

Sometimes I just need a quick breakfast for myself. This happens the most during the school year because I leave super early to go to work. Most of the time I meal prep my breakfast but sometimes I don’t and in those cases I have these quick and easy recipes I use because they will cook quick and keep me full!

If you wanted to use this as a breakfast meal prep you totally could. All you have to do is adjust the recipe for that many days. I would recommend holding off with the avocado until you are ready to eat it because otherwise it turns brown!

I would also recommend storing in a glass container. Pyrex makes great ones and they are perfect because you can put them right in the microwave!

Spinach Feta Egg Scramble

Ingredients
  

  • 1/2 cup spinach
  • 1 tbsp feta cheese
  • 2 eggs
  • 1 egg white
  • 1/2 avocado, diced
  • avocado spray
  • salt

Instructions
 

  • Spray a medium pan with avocado spray. When hot add the spinach and saute with salt. Saute for about 2 minutes.
  • Then add 2 eggs and 1 egg white. Scramble all together and continue until eggs are cooked.
  • Remove from heat and add in 1 tbsp of feta. Mix together for another minute.
  • Transfer to a bowl and top with avocado.
