Beef and Bok Choy Stir Fry

Seeing bok choy show up the first year I did our CSA I literally had no idea what to do with it but after some research, and a bunch of trial and error, I created this recipe and now I am so excited every time I see it!

Bok choy is super easy to work with and goes great with the sliced beef. I would recommend using a wok when cooking this recipe but you can totally just use a fry pan if that is what you have!

Beef and Bok Choy Stir Fry

Ingredients
  

  • 1.5 lb flank steak
  • 2 tbsp soy sauce
  • 1 tbsp avocado oil
  • 4.5 tsp dry sherry
  • 1 tsp sesame oil
  • 2 cloves garlic
  • 1 tbsp sriracha
  • 3 cups bok choy, chopped
  • 2 tbsp scallions, chopped

Instructions
 

  • Sauce: Whisk soy sauce, sriracha, sesame oil, and sherry.
  • Add avocado oil to pan when hot. Then add garlic until fragrant.
  • Add steak and cook just until browned. Then remove from heat and add sauce.
  • Add bok choy and scallions to the pan and saute for about 4-5 minutes.
  • Put steak back In and continue to cook for a few more minutes.
