Baked Chicken with Basil Chimichurri

So basil is definitely one of my favorite herbs to use and I usually have a ton of it so I’m always creating! I loved creating the chimichurri. I definitely recommend playing around with the amount of crushed red pepper to make it to your level of spice!

This is a great recipe to batch create! You can definitely freeze it. I like to freeze it in ice cube trays because then you can pop out the amount you need!

Baked Chicken With Basil Chimichurri

Ingredients
  

  • 1.5 lb chicken breast
  • 1 tbsp avocado oil
  • 4 cloves garlic, minced
  • salt
  • thyme
  • 6 cloves garlic
  • 1.5 cups fresh basil leaves
  • 1/2 tsp red pepper flakes
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil

Instructions
 

  • Preheat oven to 375 ̊. Heat pan. Then add 1 tbsp of avocado oil.
  • Season both sides of chicken generously with salt.
  • Place in pan, away from you. After about 3 minutes turn the chicken over.
  • Add in 4 crushed garlic cloves and the fresh herbs. After another 3 minutes turn the chicken back over to original side and place in oven.
  • Cook until internal temp is 165 ̊ it should be like 15-20 minutes depending on the thickness of the chicken breast.
  • Make chimichurri. Put the 6 garlic cloves, basil, red pepper flakes, red wine vinegar and olive oil into a food processor until blended together but still chunky.

Notes

To serve, plate chicken and top with chimichurri
