Vegetable Turkey Frittata

I am always trying to get vegetables in during each of my meals. Frittata’s are a great way to do that plus they are a perfect meal prep recipe!

One of the main things I look for when meal prepping is to make sure whatever I’m making isn’t going to take me hours in the kitchen. Let’s face it, I don’t have extra hours to spend!

This recipe is perfect because it checks off both my vegetable box plus it doesn’t take all day! All around win!

Vegetable Turkey Frittata

Ingredients
  

  • 4 cloves garlic
  • 10 eggs
  • 5 ounces cooked ground turkey
  • 1 cup cauliflower rice
  • 1 cup zucchini, diced
  • 1 tbsp avocado oil
  • salt
  • peppers

Instructions
 

  • Preheat oven to 375˚
  • Diced the zucchini and rice the cauliflower. You can also buy the cauliflower already riced! (Look in the veggie section!)
  • Scramble the 10 eggs. Add a little salt and pepper to the eggs.
  • Heat a nonstick oven safe pan. Add 1 tbsp of oil. Once hot mince 4 cloves of garlic. Saute until fragrant.
  • Add vegetables. Season with salt and pepper. Saute until a bit soft.
  • Add turkey and mix together
  • Add eggs and mix until eggs evenly coat veggies and turkey
  • Set the heat to low and cook until it starts to set, then move into the oven for about 16-18 minutes.
