Blueberry Banana Smoothie Bowl

I totally went outside the box with this one. You know how much I love adding vegetables to all of my meals. Usually when I make a smoothie I go for kale or spinach but sometimes it just gets old! I started doing some investigating and I have found people using frozen riced cauliflower, the kind already in the bag from the store.

I won’t lie, I thought they were insane but I’m always willing to give it a try so I put together this smoothie bowl. To my surprise it was actually fantastic! I couldn’t tell the cauliflower was in there at all and it didn’t have that cauliflower smell. The smell is what made me the most nervous! I am very sensitive to smells, especially in the morning so I knew I wouldn’t be able to handle it if the smell was stong.

What I liked the most about adding the cauliflower is that it really helped thicken the smoothie. The texture was perfect!

Blueberry Banana Smoothie Bowl

Ingredients
  

Smoothie

  • 1/2 cup oats
  • 3/4 cup almond milk
  • 1 cup frozen blueberries
  • 1/2 frozen banana
  • 1/4 cup frozen riced cauliflower

Toppings

  • 1/4 cup fresh raspberries
  • 1/2 banana, sliced
  • 1/4 cup granola
  • 1 tbsp nut butter

Instructions
 

  • In a blender mix oats, almond milk, frozen blueberries and frozen banana. Blend until smooth. It will be thick.
  • Add mixture to a bowl. Top with sliced fresh banana, fresh raspberries, granola, and almond butter.
